This is the ultimate sweet treat – and it’s good for you! (Well kind of…). Inspired by Simply Wholefoods, I have my own take on this delicious and nutritious recipe. I’ve made this for my students at yoga, so now you can make it at home. Enjoy š
Ingredients – the base:
2 cups shredded coconut
1 cup almond meal
4 tablespoons of caocao
4 tablespoons of ABC spread (Almonds, Brazil nuts and cashews)
2 tablespoons of honey
2 tablespoons of coconut oil
1 teaspoon natural peppermint extract
pinch of sea salt
Ingredients – icing:
6 tablespoons of caocao powder
4 tablespooons of coconut oil (as a liquid)
2 tablespoons of maple syrup
1/2 teaspoon peppermint extract
Method:
Line a baking tray with baking paper
Then place ingredients into your Thermomoix or food processor and blend to a crumb mixture
Press the mix into the tray (i use a rolling pin or glass bottle with a sheet of baking paper on top)
Then work on the icing – put all ingredients into Thermy or food processor and whiz until all combined and look like melted chocolate (yum!)
And then use a knife to spread over base. Then refrigerate. Then slice. Then eat…
