Katie’s Lemon nut-free bliss balls
These are delicious, easy to make and perfect for kids lunchboxes as they are nut free. They also contain lemon essential oil – an antioxidant which is up-lifting, so great for the winter blues.
Ingredients:
1/2 cup of dried apples
1/2 cup of dried apricots
1/4 cup of sultanas
1/2 cup of cranberries or goji berries
1 cup of rolled oats
2 tablespoons of sesame seeds
1/2 cup of pitted dates (soaked in hot water)
4 drops of doTERRA lemon essential oil

teaspoon of ground cinnamon
2 drops of vanilla extract
Method:
Soak the dates in hot water
Then add all other ingredients into a high powered blender or Thermomix.
Once all ingredients are in the jug, then drain and add the dates (soaking the dates helps the mix to bind)
Whizz on high speed or around speed 8 on the Thermomix for a few seconds and voila! the mix is read to roll into small balls, then store in an airtight container and refrigerate.
