Peppermint caocao bliss balls

After Monday’s Mums and Bubs class we had Peppermint Cacao mint balls – flavoured by pure essential peppermint
Here’s the recipe if you want to make them yourself (they’re the perfect pick-me-up!).

Ingredients:

1 cup of cashew nuts
1 cup of dates
2/3 cut of dessicated coconut
2 tbl spoons of raw cacao
pinch of Himalayan or Celtic salt
dash of vanilla essence
4-5 drops of doTERRA peppermint essential oil

Method:

Blend the nuts in a high speed blender or Thermomix (on speed 9 for a few seconds)
soak dates in hot water while you pop everything else in the blender/Thermomix
So add all other ingredients except the coconut
Then drain and add the dates
TIP: If it is a bit sticky add some coconut and mix again!
Then roll the balls in the coconut, put in the fridge and enjoy 🙂
