Healthy brownies!
These brownies are the perfect food for when your energy levels are flagging. They are packed with dates (studies have shown that eating six dates a day in the last four weeks of pregnancy can actually shorten labour!), * and they are great when you are breastfeeding. My kids love them as a mid-afternoon snack.
They are super easy to make and store.
What you’ll need:
A large cup of dates
cup of hot water
handful of three types of nuts and/or seeds (use any from cashews, brazil nuts, almonds etc…)
dried fruit – I like to use cranberries, but apricots are just as yummy
3-4 tablespoons of caocao powder
2 tablespoons of chia seeds
dessicated coconut
this recipe is very forgiving so you can pretty much use any dried fruit, nuts and seeds.
Kitchen utensils needed:
Thermomix or high speed mixer/blender
baking tray
baking paper
rolling pin
What you have to do:
1: Soak the dates iin hot water. Do this first as it moistens the dates and by the time you’ve got the other ingredients together, they’ll be ready 🙂
2: Add nuts and seeds to Thermomix (or similar high speed blender) you could chop but this will take a long time! Mix on speed 8 for a few seconds until they are ground up.
3: Add all other ingredients and mix thoroughly (If using a thermomix around speed 6 for 30 seconds).
4: Prepare a baking tray with baking paper.
5: Remove mixture and place onto baking tray, then sprinkle with coconut (as this makes it less sticky and easier to roll)
6: roll out so it is around 50mm thick and then place it into fridge for a minimum of 20 minutes.
7: Remove from fridge and using a knife or pizza cutter cut into squares. Store in an airtight container in the fridge.
